Simply Delicious Eggs
Servings: 8
Ingredients:
- 10 eggs
- 1 cup plain yogurt
- 1 cup cottage cheese
- 1 1/2 cup grated cheddar cheese (reserve 1/2 cup to spread over top)
- 1-2 Tbsp of green chili sauce, to taste
- 2 cups hash brown potatoes
- 3 parsley sprigs (optional)
Instructions:

Preheat oven to 350

Spray a 9x11" pan with Pam or similar product

Spread thawed, drained potatoes in the pan

Blend the other ingredients in a blender until smooth

Pour over the potatoes

Sprinkle top with 1/2 cup of cheese

Bake for 30 minutes or until the eggs have set

Artistically arrange parsley on top before serving
