Oatmeal Applesauce Pancakes

Servings: 18 large pancakes
Ingredients:
- 2 cups quick rolled oats
- 2 cups boiling water
- 1 1/2 cups complete pancake mix
- 3/4 cups half and half
- 1 egg, beaten
- 1 cup applesauce
- 1 tsp cinnamon
Instructions:

In a bowl add water to oats. Set aside for 15 minutes.

Heat griddle to 350 degrees.

Stir applesauce and cinnamon into oatmeal.

Add egg to mixture.

Alternately add pancake mix and half and half.

Stir until ingredients are combined.

Pour 1/4 cup batter onto lightly oiled griddle.

Cook until lightly brown, turning only once, approximately 2 minutes per side.

Serve with maple syrup or Alaskan birch syrup.
The pancakes sound very good and I will try them soon. What a beautiful kitchen you have!!
These pancakes are especially good with Alaskan Birch syrup which I buy from Alaska Birch Syrup Company which collects and processes the sap in the Talkeetna area.
